Jessica’s Nutella Crepes

We enjoyed nutella crepes for the first time at a small pizza shop near the Spanish Steps in Rome, Italy. This quickly became my daughter, Jessica’s favorite. We ordered this dish many times during our visit, and have tried to recreate this dish at home. This is really delicious, and best when served warm.

Crepe Batter Ingredients:
2 Eggs
1 Cup Milk & ¼ Cup Water
2 Tsp. Vanilla
1 Cup Flour
2 Tbsp. Sugar & 2 Tbsp. Melted Butter

Step 1-Make Crepe Batter:
In a blender, add all crepe batter ingredients.


Blend for about 30 seconds until the batter is smooth.


Step 2-Let Batter Sit:
Pour the batter into a large measuring bowl. Cover and let the batter sit for about 30 minutes, until all bubbles have settled from the blending process.


Step 3-Prepare the Crepe Pan:
When batter is ready, melt 1 tablespoon of butter in a nonstick skillet or crepe pan, over medium heat.


Step 4-Begin Making Crepes:
Add approx. ½ cup of the batter to the skillet and swirl around so that the batter evenly and thinly coats the bottom. Cook for about 30 seconds and flip over.


Cook the next side for approx. 10 seconds. Expect to discard the first crepe…it takes a little while for the pan to come to a consistent temperature. The crepe below was the first crepe made and discarded.


Second crepe…try again…..pour 1/2 cup of the crepe batter into the pan. Cook for about 30 seconds and flip over.


This crepe has the right look… cook for another 10 seconds.  Keep the heat at a consistent level. The crepes will cook quickly at this point….so be prepared to cook them, one after the other.


Step 5 – Layer Cooked Crepes on a Baking Sheet:
Place the cooked crepes on a baking sheet and layer with plastic wrap in between the layers (otherwise the crepes will stick to each other). The crepes can also be placed on a baking sheet and kept warm in the oven while making the whole batch. (Do not use plastic wrap if warming in the oven).


Step 6 – Prepare the Filling:
In a small bowl, add approximately 1 cup of Nutella. Microwave for approximately 1 minute, until melted and spreadable.


Step 7 – Prepare the Crepes:
With a butter knife, spread the warm Nutella on one side of the crepe and roll up (jelly-roll style). Sprinkle with confectioners sugar. This is best when served warm.


Step 8 – Enjoy!
