Oven Roasted Tomatoes, Bruschetta, Tomato Cream Sauce and Gnocchi

What do you do with left-over tomatoes? It took me a while to figure it out. I had three Roma Plum tomatoes and a bag of grape tomatoes on my counter. I decided to make oven roasted tomatoes, and then that recipe evolved into the base for several other dishes….see below. Roasting the tomatoes really brings out a delicious, intense flavor. Hope you enjoy!

OVEN ROASTED TOMATOES:
Ingredients:
3 Roma Plum Tomatoes, seeded
1 Bag of Grape Tomatoes, seeded
Extra Virgin Olive Oil
Salt & Pepper
Dried Oregano

Directions:
Slice the Roma Plum Tomatoes into quarters and remove the seeds. Slice the grape tomatoes in half, and remove the seeds (just squeeze them out). Place the tomatoes on a sheet pan that has been lined with aluminum foil. Drizzle the tomatoes with extra virgin olive oil, salt, pepper and dried oregano.

Place the tomatoes in a 250 degree oven for approx. 2 hours. The tomatoes will look like the picture below when they are finished roasting.

OVEN ROASTED TOMATO BRUSCHETTA:
Ingredients
Semolina Bread
Ricotta Cheese
Oven Dried Tomatoes
Extra Virgin Olive Oil
Salt & Pepper

Directions:
Slice the semolina bread. If desired, grill the bread with olive oil, salt and pepper. The loaf of semolina bread I purchased was fresh and delicious, so I decided to make the bruschetta with the fresh semolina bread. Top with the ricotta cheese (or any type of cheese you prefer), then layer with the oven roasted tomatoes, a drizzle of olive oil, salt and pepper to taste.

OVEN ROASTED TOMATO CREAM SAUCE:
Ingredients:
1 Cup Heavy Cream
1 Cup Light Cream
½ Cup Parmesan Cheese
Oven Dried Tomatoes
Salt & Pepper

Directions:
In a sauce pot over medium heat, add the heavy cream and the light cream and bring to a simmer. Let the mixture simmer for approx. 5-8 minutes until slightly reduced. Add the parmesan cheese and stir.

Add the oven roasted tomatoes to the cream sauce.

Blend the ingredients until creamed (either with a traditional blender or a hand blender).

OVEN ROASTED TOMATO CREAM SAUCE WITH GNOCCHI:
Ingredients:
16 oz. Gnocchi
Oven Dried Tomato Cream Sauce
2 Tbsp. Olive Oil
2 Cloves of Garlic, Sliced
½ Cup Grape Tomatoes
Salt & Pepper to Taste
Parmesan Cheese, Garnish

Directions:
Fill a large pot with salted water, and cook the gnocchi according to package instructions. Meanwhile, in a small pan over medium heat, sauté the sliced garlic in the olive oil, then add the grape tomatoes. Cook for approx. 3 minutes, or until grape tomatoes begin to burst. Add salt and pepper to taste. When ready, mix the cooked gnocchi with the oven dried tomato sauce and the sautéed fresh grape tomatoes. Serve warm with additional parmesan cheese, if desired.
